School Enrichment Programme
Here at Brighton Cookery School, we have a passion for food and believe anyone can learn to cook and appreciate fresh, fine foods. We believe all children should have these skills as they move through adolescence, but as life gets busier, its seems there is less time to spend in the kitchen at home, and these skills seem to waning amongst our young ones.
At Brighton Cookery School our aim is to ignite a passion and enthusiasm for food in all the students we work with. We achieve this by teaching 1 hour cookery sessions over a course period of 4, 6 or 12 weeks.
Our classes are fun and informative in a supported environment; this gives our students the confidence to be hands on with raw produce and kitchen equipment, enabling them to create delicious dishes from scratch. All our lessons are followed up with recipe and method cards so they can go home and recreate what they have learnt and with each lesson the students get to take home the dishes they have produced.
We have been working with some prestigious local schools since 2013 on their student ‘Enrichment Programme’. This programme was set in motion to give the students a solid foundation in the understanding of food and learning how to prepare meals from scratch. No packaged or processed foods allowed!
Our current courses run for half a term, or a whole term, depending on your requirements, but we are always happy to be flexible. The sessions are usually for one hour, for the age groups between 11-16. For older students, 16+, we run a 2 hour cookery session, in the hope of setting them up with important life skills to take with them onto university, or out into the wider world. Here we teach not only cookery skills, but also the importance of budgeting and how to make the most of a weekly shop.
At Brighton Cookery School, we offer one qualified chef with current CRB check, per 10 students, and a kitchen assistant for the session. We welcome teachers who escort the pupils to get involved at no extra cost. Students are provided protective aprons, juice and bottled water for the session and get to take away the food that they have prepared during the session. 6 Week School Course
An introduction to cooking, “Cuisine brigade” hierarchy and various facets of international cuisine.Fresh Pasta: making tagiatelles, creating pasta dough from scratch including rolling and cutting, explaining the drying process. Take home fresh Tagliatelles.
Sushi Making: (utilisation of Japanese products) Please note, we will be using fresh sashimi grade fish, smoked meats and vegetables for the students to learn the different aspects of sushi making. Take home 2 sushi rolls.
Knife skills 1: Minestrone soup, preparation of soup base, preparation of vegetables, understanding stocks. Take home minestrone soup.
Knife skills 2: Exotic fruit pavlova with sorbet. Exotic fruit preparation. Understanding and creating the perfect meringue. Sorbet making. Take home fruit pavlova with sorbet.
Butchery skills: free range chicken (halal available on request). Learning to bone out a whole chicken, with emphasis on quality and creating 5 dishes from one bird. Take home stuffed chicken supreme.
Fish mongering: Using local catch of the day, the group will learn how to de-scale, gut and prepare a whole fresh fish. Take home the de-boned fish fillets.
We welcome site visits before booking in your students cookery course and we will be pleased to provide relevant documentation (insurance liability, risk assessment, food safety certification, CRB checks etc.).
