Summer Holiday Intensive Week Cookery Course
In this 5-day intensive cookery course, we’ll take your teen and turn them from toastie mastermaker into a confident cook. We’ll arm them with the knowledge and skills to cater for a healthy, nutritionally balanced diet, and they’ll pick up creative flair from our professional chefs, so they can impress in the kitchen and make the most of their budget.
This course is suitable for students 15-years+, or gap year students, maybe heading for university or hoping to tackle the slopes as a chalet host and certainly those interested in a career in the catering industry.
We hope they’ll achieve:
- Level 2 Food Safety & Hygiene Certificate accredited by City & Guilds (optional extra)
- Knife Skills
- A range of recipes for you to be able to create again and again
- Catering for large parties
- Hosting skills/managing guests
- Baking Basics – breads, cakes and bakes
- Budgeting, ordering and shopping
- Basic French (if required)
- Food presentation
- Menu planning
- Dealing with dietary requirements
- Canapés from nothing(!)
- Cooking for Kids
- Afternoon teas
- Time management

Brighton Cookery School graciously hosted our Brighton Youth Centre ‘Bake Off’ which was filmed for the annual Youth Film Festival. Lel and the team were brilliant! The young people had loads of fun learning how to make a wicked chocolate fondant which was immediately consumed, mostly by me! Thanks BCS for supporting our Brighton young people!
I just wanted to say a huge thank you for today, what an experience for everyone. It’s not easy doing such a lesson/demonstration for any group of children, let alone a group with serious visual impairments, but it was awesome. They all felt so included and were all completely engaged. Wonderful.
